Glutamate

Glutamate is an amino acid, one of the basic building blocks of protein, that occurs naturally in many foods. When free glutamate molecules are detected by dedicated receptors on the tongue, they produce the savory sensation known as umami, the fifth basic taste. Monosodium glutamate (MSG) is the sodium salt of this compound and is widely used as a flavor enhancer in the food industry.
